Turkey Patties w/ Rice & Beans


Turkey Patties: Mix finely chopped onion, tomatoes and semi cooked spinach (chopped also) into ground turkey meat and season with salt, pepper & paprika. Mix well (with hand is best) and form into patties and cook in a non stick pan (i use a little bit of olive oil).

Rice & Beans: Saute chopped garlic, onion and green bell pepper and season with cumin & salt, then add rice and mix well until you hear it sizzle then add water. Once rice is 90 - 95% cooked, add black beans (along with some of the juices in the can) and mix well and turn heat to low to finish it off.

Sauce on top is made from yesterday's left over tomato (from coring them), I put that in a blender, add 1/8 tsp of ancho chilies, 1/8 of chipotle chiles, 1/2 bunch of cilantro, about 1/8 of an onion and salt to taste. Boil everything and reduce down. I had very juice tomatoes so it was a very watery sauce at first, but after an hour of boiling, it got to a nice consistency.

As always, enjoy with a nice side salad.

Grilled Chicken with Yams & Spinach


Grill chicken that was marinated w/ Ginger Lime from Ginger People

Yams: Cut yams into approximately 1 inch & toss, add chopped fresh red bell pepper, chopped onion, and season with coriander, thyme, cumin, salt and pepper and toss wil garlic infused olive oil and bake for 40 minutes.

Spinach: Saute garlic in olive oil flavored with lemon zest (Trader Joe's), add spinach and season with salt & pepper and squeeze the juice of half a small lemon.

Enjoy with side salad.
