Ground Turkey Breast Chili


Ground turkey breast is seasoned with ancho chili, smoked paprika, chipotle chili, and chili powders, along with salt and pepper to taste. saute in lots of garlic and onion and add blended Italian stewed tomatoes blended with one pasilla pepper and then add kidney beans and canellini beans, although I accidentally opened a can of garbanzo beans - but it tasted just as delicious.

Relish: Saute garlic and roast corn, mix roasted corn in bowl with finely chopped red onion, cilantro and about 1/2 a pasilla pepper. Add lemon juice
and salt and enjoy!

Spinach Salad


Very Healthy & Delicious

Chicken: Sauteed chicken that was seasoned overnight with Italian Herbs

Salad: Spinach leaves, tomatoes, cucumber, carrots & avocado with light garlic balsamic dressing.

Stuffed Cabbage


Stuffing: Ground turkey breast seasoned with paprika, pepper, salt, Italian Seasoning (love it!) then add diced yams & spinach.

Cabbage: separate the leaves (try to keep them as big as possible) then blanch them.

Roll turkey meat into blanched leaves & keep doing that until you run out of stuffing. Then top with blended stewed Italian tomatoes.

Enjoy with rice :)

Baked Apples & Blueberries


If you want as a topping to your pancake or with icecream or simply to enjoy by itself, this mix is easy & delicious.

Cut apple in wedges, mix blueberries & season with nutmeg, cinnamon, all spice, & sugar. Mix well & add a tiny bit of butter and bake.

Eggplant Lasagna


Very Yummy!!!!!!

This one takes a little bit more effort.

Meat: Season ground turkey breast by sauteing garlic, onion, tomato, ground pepper, salt, & Italian seasoning.

Eggplant: Slice, then dip in egg, then into Italian seasoned bread crumbs. Because I try to be somewhat healthy, I only saute/lightly fry only one side of the eggplant. Do this until you have enough.

Then layer it with breaded side up --> first layer egg plant, second layer ground turkey, & repeat. Top with 1849 pasta sauce & finish "cooking" in the oven (it's technically all cooked, but i still like to do this as i think flavors keep blending better. Note: no cheese! just a little bit of parmesan on the top. I'm sure it will taste even more delicious if you lightly add shredded mozzarella.

Then serve with a side of pasta with same 1849 sauce.

Chicken "Stew"


Very simple!

Cube chicken breast & marinate with: Dijon mustard, Worcestershire sauce, ketchup, fresh ground pepper & Italian seasoning.

To cook you can do it in a pan or in a crock pot or in the oven. I like the oven b/c it's less clean up.

So all I do is add minced garlic & chopped onion & then mix everything. (this variation has diced Yukon potatoes, diced yams, and green beans) & one can of blended Italian Stewed Tomatoes.

40 minutes later, you have a meal. I have a Krups Toaster Oven (http://ecx.images-amazon.com/images/I/41RC9H8XQBL._SL500_AA280_.jpg) so it's convenient & faster then the big oven.

Peppercorn & Herb Chicken with Mushrooms, Harvest Blend & Basil Green Beans


Chicken: In a tiny bowl add some black peppercorn, rosemary, oregano, basil & salt - then mix all those dry ingredients well. Prepare your chicken breast and then add the mix on both sides and saute in a pan with olive oil (i tend to use garlic flavored olive oil 99% of the time) and brown both sides. Once both sides are brown add 1 tablespoon of butter (i use Smart Balance) and add sliced mushroom, chicken broth and 2 tablespoon of fresh cream and mix very well and cover. Cook until chicken is cooked through and sauce thickens (about 20 -30 minutes).

Harvest Blend is from trader joes and it consist of orzo (green & red), baby garbanzo bean & red quinoa. Bring water to boil and then add the desired amount. I season with salt, saffron and italian seasoning and a tiny bit of olive oil, then cover and watch it grow!

Green beans: Very easy, just wash green beans very well, add basil, salt, pepper and sliced garlic then bake for 30 minutes and wallah! Very yummy.

Turkey Patties w/ Rice & Beans


Turkey Patties: Mix finely chopped onion, tomatoes and semi cooked spinach (chopped also) into ground turkey meat and season with salt, pepper & paprika. Mix well (with hand is best) and form into patties and cook in a non stick pan (i use a little bit of olive oil).

Rice & Beans: Saute chopped garlic, onion and green bell pepper and season with cumin & salt, then add rice and mix well until you hear it sizzle then add water. Once rice is 90 - 95% cooked, add black beans (along with some of the juices in the can) and mix well and turn heat to low to finish it off.

Sauce on top is made from yesterday's left over tomato (from coring them), I put that in a blender, add 1/8 tsp of ancho chilies, 1/8 of chipotle chiles, 1/2 bunch of cilantro, about 1/8 of an onion and salt to taste. Boil everything and reduce down. I had very juice tomatoes so it was a very watery sauce at first, but after an hour of boiling, it got to a nice consistency.

As always, enjoy with a nice side salad.

Stuffed Tomatoes with Orzo


Stuffed Tomatoes: Core tomatoes (make sure they are nice and large) and place in a pyrex and fill with ground turkey veggie mix.

Ground Turkey Veggie Mix: Saute finely chopped garlic, onion and some of the tomato that was cored out (Note: you will have lots of tomato left over that can be used for another delicious dish), then add the 99%fat free turkey (basically a ground turkey breast) and season with salt, pepper, Italian Seasoning, paprika and worcestershire sauce. As meat is cooking you add carrots, peas and mushrooms (carrots and mushrooms are chopped pretty small - same size as the mini peas), then cook meat thoroughly and transfer mix into each tomato (even if carrots and peas are still not cooked - they will finish cooking as you will then bake everything for 30 minutes).

Orzo: Saute in garlic infused olive oil fresh Garlic and fresh tomatoes (used some from the tops of the tomatoes) and season with Italian Seasoning, Salt & Pepper and Mix in cooked orzo and fresh spinach along with Parmesan cheese.

I also like to sprinkle Parmesan cheese over the entire dish before I enjoy - not pictured as Daniel doesn't eat too much cheese as it keeps the dish healthier :o)

Chicken with Spinach Penne in "white sauce"


Chicken: grilled - marinated with white wine seasoning
Pasta: Saute garlic, onion, in a little bit of butter & garlic olive oil, then add desired veggies (in this pic we have: yellow & green zucchini, mushroom, yellow & orange bell peppers, season w/ Italian seasoning then add pasta & mix well then add a little bit of chicken broth & two tablespoons of fresh cream & let it thicken up and "walla!" finish presentation by adding Parmesan cheese.

Enjoy with side salad

Grilled Chicken with Yams & Spinach


Grill chicken that was marinated w/ Ginger Lime from Ginger People

Yams: Cut yams into approximately 1 inch & toss, add chopped fresh red bell pepper, chopped onion, and season with coriander, thyme, cumin, salt and pepper and toss wil garlic infused olive oil and bake for 40 minutes.

Spinach: Saute garlic in olive oil flavored with lemon zest (Trader Joe's), add spinach and season with salt & pepper and squeeze the juice of half a small lemon.

Enjoy with side salad.

Stuffed Peppers


Pictured: One Half of a Yellow, Orange and Green Pepper. Stuff with Ground Turkey Mix.

Stuffing: Saute chopped onions and tomatoes, once they are cooked, toss in turkey (I always use ground turkey breast meat as it's 99% fat free), then season with salt, pepper, paprika and italian seasoning. Once it's almost cooked, add chopped potatoes & carrots. Wait until carrots and potatoes are mostly cooked then add cilantro. Stuff the peppers and place in a pyrex/baking dish and add 1 can of stewed tomatoes (blended) and bake for 30 minutes.

Serve with Rice (in the picture is Spanish Rice - see other entry for preparation instructions) and as always add a nice side salad.

Green Sauce Enchiladas


Enchiladas: Shred chicken (left over chicken is perfect for this dish or you can buy rotisserie or just boil chicken as you make chicken soup!) In a pan saute chopped onion, chopped tomatoes or use 1 can of stew tomatoes (chopped finely), add shredded chicken with salt, pepper, & paprika, let everything cook together & then add chopped cilantro and secret ingredient - spinach! Microwave tortillas for ~30 seconds (3 at a time - to make soft) then add chicken, roll, and put them in a baking dish (pyrex), once you've build the quantity you want, open a desired enchilada sauce and pour all over. Finally add shredded cheese (low fat) & bake for 15 minutes (or until sauce is hot & cheese has melter)

Spanish Rice: Saute onion & tomato (both chopped) then add rice, salt & water

Black Beans: canned - just heated (delicious!)

Baja Citrus Chicken & Black Bean Southwest Salsa & Rice


Chicken: Marinated w/ Baja Citrus McCornick marinade

Salsa: 1 can black bean (rinsed), saute roasted corn in garlic, add to beans along w/ chopped red roasted peppers, chopped cilantro, 1/2 lemon juice, cumin & salt to taste.

BBQ Chicken Sandwich & Rosemary Potatoes


BBQ Chicken Sandwich: Marinade & Grill chicken breast with 1849 BBQ Sauce

Potatoes: Cut red potatoes in quarters, then toss with olive oil, salt, pepper & rosemary, bake for 30 - 40 minutes.

Enjoy meal with a side salad.

Mint Turkey Meat Balls w/ Side Salad


Turkey meatballs: Finely chop, onion, garlic, mint, tomato and season with Worcestershire sauce, salt, pepper and a dash of italian seasoning. Saute and skewer them for presentation or cook them on the skewer.

Rice: Just plain white rice (I like Uncle Ben's) - decorate with mint

Salad: Mixed Greens, Tomato, Cucumber, and Pear, tossed with Roasted Garlic Balsamic dressing

Hummus & Toasty Pita Bread


Hummus: 1 can garbanzo bean, garlic infused olive oil, 1 1/2 cloves of garlic (but use less if you aren't a garlic fan), cumin, salt, pepper, lemon juice and secret ingredient --> roasted red pepper!

For presentation, top with diced fresh tomato, mint leaf and a last squirt of lemon juice.

I don't measure my seasoning, so my advice is to just go with your gut feeling "to taste" or do pinches

Spaghetti with Mushroom, Paprika and Garlic Infused Turkey Breast Meat Balls


Spaghetti with Mushroom, paprika, garlic infused ground turkey breast meatballs, with 1849 pasta sauce, fresh spinach, fresh zucchini.

Mushroom, onion, garlic are shredded then sauteed and seasoned with paprika, salt, italian seasoning & pepper, let cool and then mix into ground turkey and make into meatballs - sauteed (not boiled or baked).

Halibut, Orzo, Mixed Veggies & Mango Salsa


Ginger Lime Marinated Halibut: Marinade from Ginger People
Mango Salsa on top: 1 Giant Mango, 1/8 of finely chopped red pepper, finely chopped red onion to taste, lemon juice to taste, cilantro, cumin, salt & pepper

Orzo: Fresh Garlic, Fresh tomatoes, Olive oil, Italian Seasoning, Salt & Pepper and Mix in cooked orzo and fresh spinach.

Mixed Sauteed Veggies: Super Finely chopped garlic, ginger, red pepper then mix in other veggies just finely chopped - mushrooms, green zucchini, yellow zucchini, carrots, broccoli, seasoned with olive oil and a table spoon of garlic white wine powder, italian seasoning, salt & pepper.
